Hungarian Goulash
Beef shanks 1000 g
Onion - diced 235 g
Garlic - minced 22 g
Ghost Pepper 3 g
Paprika - ground 12 g
Caraway - ground 5 g
Bay Leaf - ground 0.5 g
Tomato Paste 35 g
Tomatos - diced, canned 467 g
Beef Stock 0.5 qt
Salt as needed
Black Pepper as needed
Directions:
Cut beef into 1 in cubes, season with salt, sear in hot oil until golden brown
Remove beef, in same pan sweat onions and garlic, deglaze with a little beef stock
Shred the beef when it’s cool enough to handle, or don’t it works both ways
Return beef, add ghost pepper, paprika, caraway, bay leaves, tomato paste
Caramelize tomato paste, add canned tomatoes, top with stock until barely covered
Simmer until tender, season with salt and pepper
