Stuffed Pork Chops
Stuffed Pork Chops
4 Pork Chops, 1 ¼ inch, cut with a pocket
1 c Stuffing (recipes below)
As Needed Salt and Black Pepper
· Stuff each chop with ¼ c of stuffing of your choice
· Season with salt and Black Pepper
· Grill on med-high heat (about 450 – 500) until medium (pull off grill at 125 F)
· Let rest 5 minutes, serve over spatzle, polenta, rice, potatoes, or something starchy.
Spinach Artichoke Stuffing
2 t Garlic, minced
¼ c Onion, diced
1 T Butter
6 oz Artichoke hearts, drained, chopped
2 C Spinach, fresh
3 T Parmesan, grated
As Needed Salt and Black Pepper
Sauerkraut Apple Stuffing
2 t Garlic, minced
¼ c Onion, diced
1 T Butter
¼ c Apple, diced
1 C Sauerkraut, drained
1 t Caraway seeds
Method for both stuffings
1) Sweat garlic and onion in butter until soft
2) Add Apples or Artichokes, cook until tender
3) Add Sauerkraut and Caraway or Spinach and Parmesan, mix well
Season with salt and black pepper, let cool, stuff chops and grill
