Beef 1 kg
Flour 33 g
Salt 10 g
B. Pepper 10 g
Cayenne 10 g
Oil 2 oz
Onion - diced 84 g
Garlic - minced 17 g
Beer - Porter 11 oz
Beef Stock 6 oz
Carrots - dice 166 g
Yukon Potatoes - dice 200 g
Tomato Paste 33 g
Bay Leaf 1 leaf
Thyme 2 g
Trim beef and cut into 1-inch cubes
Mix salt, b. pepper, and cayenne into flour
Toss beef in flour mix
Sear beef in hot oil until golden brown, remove and reserve
In same pan, sweat onions and garlic
Add tomato paste and caramelize
Deglaze with beer, scrap up the fond
Add beef and stock to pot
Simmer 30 min
Add in carrots, potatoes, bay leaf, and thyme
Simmer until beef and veggies are tender ,
Serve with crusty, warm bread
